Caramelized White Chocolate with Sugar Glass and Oregon Sea Salt

Enna's childhood best friend put in a request for a creme broulee bar, and this is the result. We start by making white chocolate with beautifully aromatic Tanzanian cocoa butter blended with cane sugar and toasted organic whole milk powder, then pour the chocolate over shards of caramelized sugar glass and windowpane crystals of Jacobsen sea salt from Oregon. The result is a deliciously sweet, salty, caramely confection that is of course named after Enna's friend Cassandra.
